Quick comfort

How to pull together a quick, comforting meal with ca. 5 ingredients:

  • Do you happen to have some cooked potatoes on hand?
    • Why yes, as a matter of fact I do! Good for you! Chop them into cubes.
    • Nope. Throw a large batch in the pressure cooker and steam for 10 minutes, or chop them up and boil them in salted water until tender. Make more than you will need for this meal, your future self will thank you.
    • I’m not feeling the potato vibe today. I don’t know how that’s possible, but okay. Boil some pasta instead. Or grab a slice of bread, or skip the carb component altogether.
  • You will need some cauliflower. You could use broccoli too, but the charm of this dish is it’s humble non-greenness. Chop it into small florets.
  • Did you already cook a large batch of any variety of white beans or chickpeas this week?
    • Yes! *beams proudly* You are a star, nothing to do here except take it out the fridge.
    • Nope. Crack open a can. And soak some beans right now for tomorrow. Again, future self will love you.
    • I’m not feeling the bean vibe today. Mmmkay, then how about a few cubes of tofu? Or boil some green lentils.
  • Get out a jar of artichokes, preferably in oil.
  • Fresh or dried rosemary rounds it all off. A pinch of thyme and some sweet paprika won’t be amiss here, if available. And if you are feeling extra fancy, right at the end, shave in a little organic lemon zest or a squeeze of lemon juice.

In a pan, heat a bit of the artichoke oil (or olive oil) then add the cauliflower florets and cook for a few minutes. Then add the cooked potatoes, beans/chickpeas, rosemary and some salt and pepper. Sauté until everything browns a little bit, another 5ish minutes. That’s it. If you have cooked potatoes, the whole thing comes together in 15 minutes. If not, it’s still a 30 minute sort of meal. Simple. Comforting. Delicious.
